The tasty squash are a little firmer than something like zucchini (which can get a bit watery when cooked). They ripen to a range from all green to all yellow. The nice thing about these squash is they do not get seedy unless they are larger than 6 inches across so small squash and larger ones have the same meaty quality.
Saute these with sweet onions or garlic scapes
